Wilted Greens with Feta Cheese and Mint

Shredded cabbage is so quick to cook when steamed till just tender and crisp. It’s delicious in this Greek inspired recipe – tossed with fruity olive oil, crumbled Feta and fresh mint. Perfect with roast lamb or garlicky sausages.

Ingredients

200g green cabbage
1 fat garlic clove, halved
100g Feta cheese
1 tbsp good, fruity extra virgin olive oil
1 tbsp finely chopped fresh mint
Coarsely ground black pepper

Instructions

Coarsely shred the cabbage. Put it with the garlic in a metal colander or steamer basket over a pan of boiling water. Cover with foil or a lid and steam for 5-7minutes until the cabbage is just tender but still crisp.

While the cabbage is cooking, crumble the Feta cheese into a small bowl and add the olive oil, mint and plenty of pepper (the cheese should add enough salt).

Tip the cooked cabbage, removing the garlic clove, into a heated serving dish and pour over the cheese and herb mixture. Toss together well and serve immediately.

Tips: The steamed cabbage is great with coarsely grated mature Cheddar cheese and chives too.Try steaming a mix of cabbage, sliced courgettes and sugar snaps.
